Hazelnut Oats + Apple Cream
This oatmeal dish started without the apple cream, but something was missing. It needed that element of elegance and mock apple pie to bring its grounding goodness altogether. Please enjoy this new recipe that combines sprouted oatmeal, flax meal, hazelnuts, coconut sugar, all plant based apple cream, and shaved brazil nuts.
Ingredients
Hazelnut Oats
3/4C SPROUTED ROLLED OATS (cooked to your preference)
1-2 Tbsp GROUND FLAX SEED
1/4C CHOPPED/GROUND HAZELNUTS
1 Tbsp COCONUT SUGAR
1/4C APPLE CREAM
1 BRAZIL NUT
DASH OF CINNAMON
Apple cream
4 APPLES
2-3 Tbsp MIYOKO’S VEGAN BUTTER
2 MEDJOOL DATES
1/2C ALMOND MILK
1 tsp CINNAMON
1 tsp MACA POWDER
1/8 tsp SALT
WATER AS NEEDED
DIRECTIONS: HAZELNUT OATS + APPLE CREAM
I’LL BEGIN THIS RECIPE FIRST SHOWING HOW TO COOK THE APPLE CREAM, FOLLOWED BY DIRECTIONS FOR ASSEMBLING THE WHOLE DISH.
APPLE CREAM
Begin by peeling Apples and finely chopping them into small chunks.
Heat sauce pan to medium high and add Apples without any oil or liquid.
Allow the Apples to soften and dehydrate, turn them over occasionally, but let them brown.
Once they begin to brown, add Miyoko’s Vegan Butter, followed by the 1/2C Almond Milk. Cover the saucepan and reduce heat to medium low while cooking.
Chop and pit two Medjool Dates and add to pan with Cinnamon, Salt, and Maca Powder.
Add enough water to almost cover the Apples and continue to cook until Apples have really softened and Medjool Dates have disintegrated.
Turn of the burner and transfer the pre-sauce into a high speed blender for saucing.
Blend on high and add more Cinnamon as needed. Blend to a preferred texture, with a viscosity fit for squeezing out of a sauce bottle.
HAZELNUT OATS + APPLE CREAM
Cook Oats (sprouted or not…I prefer to eat One Degree Organic Foods Sprouted Rolled Oats when available) to your preference (I usually stovetop cook oats with water and almond milk, no salt or sweetener).
Chop 1/4C Hazelnuts as finely as desired and mound it on top of the the Oatmeal.
Sprinkle Flax and Coconut Sugar on top of Oats and Hazelnuts.
Drizzle Apple Cream on top of the whole mixture with a spoon, sauce bottle, or other instrument.
Grate shavings of Brazil Nut on top using a coarse microplane grater.

Even a fine sprinkling of some salt could be nice!
