Chocolate Banana Bread Muffins

Ingredients

Wet Ingredients

3 Bananas, mashed
2 Flax “Eggs” (2Tbsp Ground Flax + 6Tbsp H2O)
2tsp Vanilla Extract
1/4C Honey (or Agave for non-honey consumers)
1/4C Maple Syrup
1/4C Non Dairy Yogurt
1/4C Coconut Oil, melted

Directions

1 In a bowl, combine Flax and Water. Let it sit for 5 minutes.

2 In a separate bowl, mash Bananas.

3 Add Vanilla Extract, Honey (or Agave Syrup), Maple Syrup, Non-Dairy Yogurt, and Melted Coconut Oil to Mashed Bananas.

4 Mix Flax “Eggs” into the wet ingredients bowl and combine.

5 Combine all dry ingredients together. Mix well.

6 Mix wet and dry ingredients together. Allow them to sit for about 5-10.

7 Pour Batter into a Muffin Tin and bake in the oven at 350F for 26-30 minutes.

8 Remove from the oven and allow to cool for 15 minutes before plating. Enjoy!

Dry Ingredients

3/4C Sorghum Flour
1/2C Almond Flour/Meal
1/2C Cocoa Powder
2tsp Baking Powder
1/2tsp Fine Sea Salt
